If I were to use a Mopar 528 cam and 340 spec springs, how much would I need to have trimmed from the top of the valve guides? (or suggested amount??)

Someone might know a number, but you need to check your combination.
Most of the time, cutting for a better seal will get the clearance you need.
A seal like the teflon style, not the rubber style.

.100" is my go-to for guide trimming, but you should install a valve and retainer to see what your gross clearance is now and subtract the height of the seal you'll use for the net clearance.

Yes, measurement is best, but 0.125" is a good ballpark. Careful you do not coil bind those 340 springs too. Not sure they can take that lift number. Good to see you on the site!

340 springs are right on the edge with that cam. As Lou said, make sure to check coil bind.

Thanks for the input! I'm going by what's on hand as far as valve springs go. I heard they need to be cut after the lift goes above .450...but I don't how much truth there is to that.
