Think carefully before you decide to change the car's colour. Doing so adds a great deal of cost and effort for any given quality level of the overall finished job. If you stick with the original colour, your bodywork and paint dollar goes a lot further. See this thread, and keep in mind that a car with a nice paint job looks great no matter what colour is involved.

That's a tough question to answer. It's really hard to find good and reliable body and paint men, probably because of their long-term exposure to toxic chemicals. It's easy to spend a lot of money on a paint job...how fancy do you want to go? How much do you want to spend? This will determine whether you're trying to find the least-worst cheapie place, the highest-class big-bucks place, or something in between.

I had the original seats in my '71 redone by a local upholstery shop. They turned out great, see here.

Do a valve adjustment.

Do a complete and careful tune-up. Some recommendations for the best parts are in this post. It is likely your carburetor will also need rebuilding. Don't buy a "remanufactured" carburetor from a parts store, they are junk.

Whoah, hold your horses...see this post.

First get everything working basically right, then think about modifications (...and paint jobs ;-) )

There are two adjustments. See here .
