Besides the manifold heat for the choke, does the intake need heat for correct air/fuel mixture? :?

Since you are staying with the 1bbl, I assume this is strictly a "daily driver" car. With this type of car, you really want some manifold heat, for low rpm drivability. You are in Georgia, and do get cold weater, which is even more reason for manifold heat. I have never tried doing it on a 1bbl manifold, but if you really want headers, you could probably make a adapter plate to bolt up to the bottom of the intake manifold, and run hot water from the heater system, to it. It wouldn't warm up as quickly as being exhaust heated, but should work. Also use an electric choke.

PS: With headers, you might need to change the main jet in the carb, one or two sizes richer.

Thanks Charrlie S looks like I'm staying with the stock manifold.....but headers sure do look nice! :D

You could always go with "Dutra Duals". That would give you dual outlet and manifold heat and a provision for a choke. They would not only outlast headers, but also outlast the car.

While they are shown as "not available" here, you may be able to locate one somewhere else, or fabricate your own.
