are you actually spuing coolant?
If not I doubt you are actually running hot.
like others have said you can't trust the gauge especially after installing a rebuilt engine. are you using the sending unit that came on your block from the factory?
you said it had a 7# cap before, why did you change it to a 13#cap?
Also what kind of mixture are you running? more water in the mixture will help things run a little cooler. I found the stock sending unit from my 70 Valiant would you like to try it?

I'm gonna stick my neck out here and say again that I think it's not really overheating, at least not anywhere near as bad as the stock gauge says. It'll be interesting to see if I'm right when it's all figured out.

Highest temp taken where the sending unit guage goes is 219 degrees. Antifreeze-water mix is at 50-50.

Well see how it all goes after I take it in to the garage. I found a 22" radiator with shroud and 7 blade fan which I might get recored depending on what they find.

Does this engine have a head gasket that requires a re-torquing after the initial break-in?
