if i take .75 mill off the head and use fel pro head gasket ballpark wise where would my compression be with stock pistons???

Ummmmmm.....do you REALLY mean ".75" ? Keep in mind, .75 is 750/1000's, or 3/4". You won't have anything left for a combustion chamber, it will have cut off all of the gasket surface, and for damn sure, the valves will hit the pistons.

75 thousandths or 0.075" with a thick felpro should get you around 9-1 Compression ratio.
I took 0.100" off my head and am cranking 150-160psi
