The missing part is the choke heater controller. Its job is to modulate electrical power to the heater in the choke thermostat coil. If there is no power to the heater, then the choke coil will stay too cold for too long, and there will be too much choke action. The choke heater controller looks like this:
and is NAPA Echlin number 2-1695. So that's one part that needs replacing.It also sounds like the choke thermostat itself isn't working correctly, if you get stalling when the engine is cold. Is there spring tension in the push-rod that runs up from the choke thermostat to the carburetor, when the engine is cold? If not, there won't be any choke action, the engine will stall (lean) and you need a new choke thermostat, NAPA Echlin 2-326, which looks like this:
The third component of your choke system is the choke pull-off. This is the vacuum-operated pod located on the driver's side of the carburetor. When vacuum is applied to it, it pulls the choke partway open. If this component is broken and the thermostat does produce spring tension in the push-rod, there will be too much choke action and the engine will stall (rich). NAPA Echlin 2-4824, looks like this:
