Ramps may get you more clearance then a jack. Block up the rear wheels, no more tranny to keep the car in place
I have a 3 ton jack that extends a fair amount - I got the car in the air on stands, lowered the tranny on the jack, then had to slide the jack out from under the tranny and drag the tranny out. I couldn't pull it back with the jack because it would smack the k-frame. If you have to go this route, leave some sheet metal under the tranny to make it easy to drag out.
Try to get a block of wood that covers the whole pan, easier balance this way. I didn't have to support the engine with a jack during removal, but it wouldn't hurt to jack up the engine a bit after removal and lower it on blocks so the engine doesn't hang on the mounts too long.
Don't forget the starter, tranny cross member, torque converter bolts, and watch the exhaust.
