Any ideas on lightening steel hood and trunk? Can the middle brace be removed on the hood with not to many flex problems?

Sort of depends what the goal is. If you're making a race-only vehicle, and can't afford fibreglass parts, then sure, remove some bracing. But if you're driving on the street, leave the bracing intact, because the negative results of removing it are greater than the minor benefit.
