I have a 225 that's happy, runs well and moderately clean. It's out of the car waiting the next project. While it's hanging out in the garage, is it worth while to freshen it up? Once I pull the head I would be obligated to do a port & polish, cam, blah blah, blah.

Or should I degrease it, paint it and call it a night?

If it runs well... run it.
If you have time and money to do a performance engine, get another "core" engine and rebuild that one... while you enjoy driving your car with the current engine.

clean it paint with hemi oragne and call it a hotrod....outta be woth a few HP LOL
