What is the current good gasket set? I see a few brands, felpro seems to be one of the go-to's but I just want to make sure I'm buying quality before putting things back together

depends on the gasket. If you want a headgasket you will want to choose the thickness that you need to achieve the compression that you want. Remflex is often the preferred brand for the intake/exhaust gasket but won't show up in any kit. Do you want a cork or rubber valve cover gasket, I believe someone even made silicone VC gaskets at one point. The valve cover gasket choices may change depending on if you are installing a more rigid aluminum valve cover.

I suspect felpro will be one of the only brands offering a full gasket set for the slant six, just be aware that felpro's quality has dropped in recent years along with almost every other brand.

Felpro for everything other than intake/exhaust and hotbox gaskets which should be remflex. I’ve never had an issue with felpro gaskets. I usually don’t use the head gaskets that come in the “kits” when building V8’s, but I do for the slant.

Look on eBay. You'll find Victor, rol, Detroit gasket and more.
On newer stuff lately I've had 2 instances where the fel pro hasn't sealed and I've gotten the victor reinz and much better job of sealing. Most recent was the intake plenum on a 360 magnum in my Durango, ever since I put the fel pro in its drank oil a quart every 1200 or so, I redid it with the victor and put the first quart of oil to top off in at 3k miles and it wasn't quite the whole quart down... Some of fel pro's material is just too hard to expect it to seal.

I have nearly always used Felpro gasket sets. I have not gotten a bad kit yet for the Slant, but it's been a few years since I ordered one. Agree on the remflex for int/exh gasket.
