I want to build up a head and then swap it into my daily driver. Is there anything to watch out for if I put a '62 head on a later ('64 to '68 I think) block?

As long as it has mechanical lifters, there is no problem. The late '60 heads offer a revised combustion chamber (flow better) then the early ones though.
