I've heard of fuel injection systems with one or more injectors, I was just wondering what the difference was, why would you only use one or two injectors? Why not all six for the six cylinders?

It depends on where the fuel is being injected. With throttle body injection ( TBI ) the injectors are mounted in or on the throttle body and the mixture is carried through the manifold in the same way it is with a carburetor. With multipoint fuel injection ( mpfi ) the injectors are placed at or sometimes in the intake port and the throttle body and manifold only regulate air flow. With TBI you wil have one or 2 injectors typically but with MPFI there will be one for each cylinder.

Throttle body injection, with only one or two injectors, can be a bit easier to install as you only have to make an adapter for the TBI rather than add injectors at each port and make a fuel rail. It still has some of the same fuel distribution issues a carb does, but it has some more tunability than a carb.
