would i be able to buy this exhaust manifold and change it into a Dutra dual type of set up?

You can use that or pretty much any exhaust manifold to make the rear section. You get the front section from Doc.

That looks like the new Chinese-made reproduction. I bought one of those for my own project. You can saw off the front half to make a rear section for Dutra duals, but the quality of its casting is not as good as an original junkyard manifold if you can get one.
