I have a similar doctordiff kit. My wheel moved out some because I changed to BBP axles (in a stock 8 3/4" A body housing) that use the B body brake offset.

The calipers are Mustang Cobra's - the ones doctordiff included were brand new from Ford Racing - the equivalent of Mopar Performance I believe.
You're correct but there is another layer to the supply chain. The calipers are actually built by Varga which is a company I didn't even know about until just recently. Ford uses Varga brakes on a bunch of vehicles. I think they are located in Brazil.

Baer uses Varga calipers on some kits also and I think that SSBC or MasterPower might also use Varga calipers.

DoctorDiff's kits are designed so that the caliper bracket is the same thickness as the drum backing plate so everything goes back together properly. Some aftermarket kits are all screwed up in that area.

Nice! - Will this dr diff kit work with an f body 8.25? also any provisions for parkiung brake cable?

The DoctorDiff kit uses OEM calipers so the e-brake is included.

I don't know anything about 8.25 rearends. Call DoctorDiff, he'll probably know the answer to that.
