What width 14" rims

...can I use on my 62 Signet--6" or 7"? I intend to buy Cragar SS, and mount tires in the 205-235 range, in either 60 or 70 profile. What should I opt for? I do plan to sup it up with 4ble, headers, head work, etc.

7" should be no problem if the offset is right. Backspacing should be 4-4.5" for best fit. 6" is good too, and is 2" wider than your stock rims. 205 width tires would work very well on the 6", but might look a little funny on 7" rims. 215-225 would be better on 7" rims.
