I will be converting from 1BBL to 2BBL Super Six. Other than looks, is there any benefit in going from a single exhaust to a dual exhaust system using a Y pipe attached to the stock single exhaust manifold.

No. If you want duals, get Dutra Dual exhaust manifolds. If you're staying with stock type exhaust manifold, run one pipe off it, preferably of 2¼" diameter.
