I've been slowly aquiring parts to switch to two barrel set up on my freshly rebuilt 225, 3spd manual. I have an intake and a couple exhaust manifolds to choose from. I also bought a gas pedal with a throttle cable to give me more options, but I'm not sure how to mount everything.

I've read that the Weber's give more tunability, while the Carters are more forgiving. My goal is more power with easy installation as I don't have access to welding or machining equipment. Which direction should I go, and is there another choice I'm not aware of?

Since I am short on time and expertise, I would like to just buy one that is new, or send one in to a professional carb rebuilder (not schucks :lol: )
Any suggestions on who to buy from or go through?

The Carter BBD would be a cheaper way to go. There are quite a few holley's out there that have been used on the 2 barrel intake that do pretty well. I am sure that someone can give a list of compatible carbs that work pretty well.

The Carter does ok, it doesn't seem to be real picky when it comes to tuning. In my experience, it has been: hook it up, set timing, adjust idle air screws to optimum and then set idle speed.

As far as the later pedal goes, if you dont have the resources to weld, you can simply set the pedal farther down on the firewall and have it pointed out towards you a bit more. I did this installation on a '65 Dart (Stephaniebrite77's car) way back in the spring, and it worked out well. I had to shim some of the bolts to make it flat against the firewall, and drill a few holes to mount it, but the installation has been working flawlessly since then.
